Thanksgiving

Our Thanksgiving Menu

roasted turkey
steamed broccoli
stuffing (Stove Top)
maple pecan roasted sweet potatoes (recipe below)
corn
gravy
dinner rolls
Maple Pecan Sweet Potatoes
Ingredients:
2 lbs sweet potatoes, peeled
1 T. brown sugar
1/2 tsp. salt
1 T. olive oil
2 T. finely chopped pecans
2 T. maple syrup
1 T. butter, cut into small pieces
cooking spray
Preparation:
Preheat oven to 450.
Cut potatoes in chunks and put in a ziploc bag. Sprinkle with salt and drizzle with oil. Close bag and shake to coat potatoes. Place potatoes on a foil-lined baking sheet that has been sprayed with cooking spray. Bake for 35 minutes or until browned. Put in a bowl and add remaining ingredients. Toss to coat. Serve immediately.

Easy Lunch Ideas

Jason leaves for work around 6am, so I'm usually half-asleep when trying to put his lunch together at 5:30 in the morning. It does take a bit longer to make a healthy lunch, but not as long as you think!

One easy thing to do is make some wraps using Flatout bread. I drizzle it with honey mustard, add either baby spinach or romaine lettuce, 2 oz of lunch meat, and a slice of low-fat cheese. They look delicious and I haven't heard any complaints. You can also use the bread to make a nice thin-crust pizza and hundreds of other things!

For a snack idea, I am currently having some yogurt flavored with pumpkin, pumpkin pie spice, and a little Splenda. It is almost like eating a pumpkin pie!
